This loaf is amazing with cheese and is a delicious treat for all year round!
- 350g Granary Flour
- 150g Strong White Bread Flour
- 275g Milk, hand hot
- 50g Unsalted Butter, at room temperature
- 20g Yeast
- 15g Soft Brown Sugar
- 8g Salt
- 50g Dates, roughly chopped
- 50g Walnuts, roughly chopped
To begin, fire up your wood fired oven to its optimum temperature and leave to cool to 220°c.
Add the yeast and butter to the milk, stir to dissolve and leave to one side for 5minutes.
Next put the flours, sugar and salt in the mixing bowl and add the liquid. Knead for 8 minutes then place into a bowl and leave to proof for 1 hour.
After an hour, knock back your dough, mix in the dates and walnuts and roll into 2 loaves.
Lightly slice the top of the loaves, place on a tray, and prove for a further 20minutes.
After your final proofing, pop your loaf into your wood fired oven and bake for 20-25 minutes. Once fully baked, remove from your oven, place on a cooling rack and enjoy!
