Wood Fired Sweet Potato & Polenta Chips
As well as forming one of your five a day, these chips are a great side dish to burgers or just as something for you to nibble on. Add a pinch of chilli flakes for a fiery kick.
2 medium sized sweet potatoes, scrubbed and cut into chips
5 tbsp sunflower oil
3 tbsp polenta
1 tsp malden sea salt
1 tbsp smoked paprika
1 tbsp fresh rosemary, chopped
Firstly, fire up your wood fired oven to its optimum temperature and allow to cool to around 240°C.
Then, toss all your ingredients into a bowl so the chips are evenly coated and lay out on a high heat baking tray.
Place in your wood fired oven for around 30 minutes- shaking and tossing occasionally.
As soon as the tray is out the oven, sprinkle with table salt and serve.
